Fried Broadbeans

A 16th century Italian Recipe, translated into English by Shannon Wanty

p16v Per frigere la faua nella padella. (To fry broadbeans in a frying pan.)

Take broadbeans, and sage, and onions, and figs as it is said above, and other good herbs, and mix all these things together, and fry them in a frying pan with oil, and make a frittata, and like you cook cauliflower, and top with some good spices.
