p15v-16r Per fare cuocere el riso in tempo quadrigesimale per fare diece menestre. (How to cook rice for Lean days to make ten dishes.)
Take one pound of almonds, and clean them well so they become white, and take one pound of rice and wash it very well two, or three times in warm water, and put it on the fire with clear water, and make it boil as is said above in the second chapter for white dish or meat and rice. Except do not put it in meat broth.
