First sear or roast slices of bread over the fire, until each begins to toast. Then put the said slices in a frying pan or tart pan, and over these put also some slices of cheese cut a little more thinly than the bread, and over the frying pan put its cover so that it becomes hot, so that the said cheese begins to bind or melt, and throw over this sugar with cinnamon and ginger.
